Sticky Thai Lettuce Cups
Here is one of my favorite meals that is simple to make at home. This Sticky Thai Lettuce Cup is so nice and flavourful that you'll want to make more.
Ingredients:
1/4 bunch coriander
1 T vegetable oil
250g beef mince
1 garlic cloves, finely chopped
1 spring onion, finely chopped
1 T fish sauce
2T lime juice
1/4 bunch mint leaves, roughly chopped
1 cos lettuce, washed, leaves separated
1T Kecap Manis
Method:
1. Pick leaves from half the coriander and reserve. Finely chop the remaining coriander.
2. Heat oil over high heat in a wok or large frying pan. Add mince and garlic and stir-fry for 5 minutes, breaking up lumps, or until browned and liquid has evaporated. Transfer to a bowl. Stir in onion, fish sauce, and lime juice and toss well to combine. Add chopped coriander and a little each of the mint and chili, reserving some for garnish.
This recipe only serves for 2

if needed use Salt for that extra tang.

3. Spoon mixture into lettuce leaves, garnish with reserved herbs and chili, and shallots.
4. Drizzle with kecap manis to finish off.
